Instructions
Cooking risotto might seem intimidating, but trust me, it’s all about patience and stirring—a lot of stirring. Here’s how you create this creamy delight:
- In a medium saucepan, warm the broth over low heat. Keep it warm as you cook the risotto.
- Heat the olive oil in a large skillet over medium heat. Add the onions and cook until translucent, about 5 minutes.
- Add the garlic and mushrooms to the skillet. Sauté until the mushrooms are tender and browned, about 8 minutes.
- Stir in the arborio rice and cook for 2 minutes, letting the grains get lightly toasted.
- If using, pour in the white wine, and cook until it’s mostly absorbed, scraping up any bits from the bottom of the pan.
- Begin adding the warm broth, one ladle at a time. Stir frequently, allowing each addition to be absorbed before adding more.
- Continue this process until the rice is creamy and al dente, about 18-20 minutes.
- Once the risotto is done, remove from heat and stir in the Parmesan cheese and butter. Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
