Ingredients
Here’s what you’ll need to create this delightful dish. Feel free to adjust to your taste or dietary preferences.
- 12 ounces of fettuccine or your pasta of choice
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 2 cloves garlic, minced
- 1/2 cup homemade or store-bought basil pesto
- 1 cup heavy cream
- 1/4 cup grated parmesan cheese, plus more for serving
- Salt and freshly ground black pepper, to taste
- Fresh basil leaves, for garnish
If you’re out of parmesan, pecorino works as a great substitute, adding a slightly sharper flavor. And if you prefer a lighter version, swap the heavy cream for half-and-half.
Instructions
Follow these simple steps to bring this delicious dish to life:
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes.
- Add the minced garlic to the skillet and sauté for another minute until fragrant.
- Reduce the heat to medium-low, then stir in the pesto and heavy cream. Let it simmer for 2-3 minutes until the sauce thickens slightly.
- Add the cooked pasta and parmesan cheese to the skillet. Toss everything together until the pasta is well coated in the sauce. If needed, adjust the seasoning with more salt and pepper.
- Remove from heat and garnish with fresh basil leaves and extra parmesan cheese before serving.
Here’s a little tip from my kitchen to yours: to make the sauce extra creamy, save a bit of the pasta water and add it to the sauce along with the pasta. It helps bind everything together beautifully.
