Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley, for garnish
- Optional: 1/4 teaspoon red pepper flakes for a bit of heat
For those who prefer a lighter option, you can substitute the heavy cream with half-and-half or coconut milk for a dairy-free version. The Parmesan can also be swapped with nutritional yeast for a vegan twist.
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.
- Pour in the chicken broth, scraping up any brown bits from the bottom of the pan. Let it simmer for a minute.
- Reduce the heat to medium and stir in the heavy cream and Parmesan cheese. Allow the sauce to simmer for about 3-4 minutes until it thickens, stirring occasionally.
- Add the lemon juice and red pepper flakes, if using, to the sauce. Adjust the seasoning with more salt and pepper if needed.
- Return the shrimp to the skillet and cook for another 2 minutes, coating them well in the creamy sauce.
- Garnish with fresh parsley before serving. Enjoy your Creamy Shrimp Dinner immediately for the best flavor!
As you cook, remember to trust your senses, just like my abuela taught me. The sauce should be rich and smooth, with a hint of zest from the lemon. Feel free to adjust the seasoning to your liking, creating a dish that’s uniquely yours.
