Ingredients

To bring these delicious bowls to life, you’ll need a few simple ingredients that pack a punch:

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha, or to taste
  • 2 tablespoons lime juice
  • 2 cups cooked jasmine rice
  • 1 cup shredded cabbage
  • 1/2 cup diced cucumber
  • 1/4 cup chopped cilantro
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Feel free to substitute the jasmine rice with brown rice or quinoa for a healthier twist. And if you’re not a fan of cilantro, parsley works just as well!

Instructions

Let’s get cooking! Follow these steps to craft your own bowl of happiness:

  1. In a shallow dish, place the flour. In a second dish, add the beaten eggs. In a third dish, place the panko breadcrumbs.
  2. Season the shrimp with salt and pepper. Dredge each shrimp in flour, shaking off any excess, then dip into the egg, and finally coat with panko breadcrumbs.
  3. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Once hot, fry the shrimp in batches for 2-3 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.
  4. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice to create the bang bang sauce. Adjust the sriracha to your desired heat level.
  5. Assemble the bowls by dividing the cooked rice among four bowls. Top with shredded cabbage, diced cucumber, and crispy shrimp.
  6. Drizzle the bang bang sauce generously over the top, and garnish with chopped cilantro.
