Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 cup breadcrumbs
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs, beaten
- 1/4 cup vegetable oil
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- Optional: Sliced avocado or jalapeños for extra flavor
Feel free to swap the flour tortillas with whole wheat or gluten-free options. The chicken can also be substituted with turkey or tofu for a different twist.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pound the chicken breasts to an even thickness, about 1/2 inch, to ensure they cook evenly.
- In three separate bowls, place the flour, beaten eggs, and a mixture of breadcrumbs, paprika, garlic powder, onion powder, salt, and pepper.
- Coat each chicken breast in flour, dip in the beaten eggs, then coat thoroughly with the breadcrumb mixture.
- Heat the vegetable oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for about 3-4 minutes per side until golden brown.
- Transfer the chicken to the prepared baking sheet and bake in the oven for 12-15 minutes, or until the chicken is cooked through and crispy.
- Allow the chicken to rest for a few minutes before slicing it into strips.
- Warm the flour tortillas in a dry skillet for about 30 seconds on each side.
- Assemble the wraps by layering shredded lettuce, diced tomatoes, sliced chicken, shredded cheese, and a drizzle of ranch dressing onto each tortilla.
- Roll the tortillas tightly into a wrap, slice them in half, and serve immediately.
For a personal touch, add a sprinkle of freshly chopped cilantro or a squeeze of lime juice just before serving. These little touches often remind me of the hearty meals shared in my childhood home.
