1 pound salmon fillet, skin removed and cut into 1-inch cubes
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for extra heat)
2 eggs, beaten
1 cup panko breadcrumbs
1/4 cup honey
2 tablespoons hot sauce
1 tablespoon soy sauce
1 tablespoon olive oil
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a shallow bowl, mix the flour, salt, black pepper, and cayenne pepper.
Place the beaten eggs in a separate bowl, and the panko breadcrumbs in a third bowl.
Dip each salmon cube into the flour mixture, then the egg, and finally coat with the panko breadcrumbs. Arrange the coated salmon on the prepared baking sheet.
