Ingredients
- 1 pound of fresh salmon fillet, skin removed and cut into 1-inch cubes
- 1 cup of freshly grated Parmesan cheese
- 1 cup of panko breadcrumbs
- 1 teaspoon of garlic powder
- 1 teaspoon of smoked paprika
- Salt and pepper to taste
- 2 large eggs, beaten
- 1 tablespoon of olive oil
- Lemon wedges for serving
- Optional: Fresh parsley, chopped, for garnish
Feel free to experiment with substitutions. If you’re out of panko breadcrumbs, regular breadcrumbs will do. And for a bit of heat, try adding a pinch of cayenne pepper.
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper to prevent sticking.
- In a shallow bowl, combine the Parmesan cheese, panko breadcrumbs, garlic powder, smoked paprika, salt, and pepper. Mix well.
- In another bowl, beat the eggs until smooth. This will be your binding agent for the salmon.
- Dip each piece of salmon into the beaten eggs, ensuring it is fully coated, then roll it in the Parmesan mixture, pressing slightly to adhere.
- Place the coated salmon bites onto the prepared baking sheet, ensuring they are spaced evenly.
- Drizzle the salmon with olive oil to encourage even browning and bake for 12-15 minutes or until golden and crispy.
- Once done, remove from the oven and let them sit for a minute before transferring to a serving platter.
From my experience, the key to achieving the perfect crispiness is making sure your Parmesan mixture is well-balanced and evenly distributed. And remember, patience is a virtue—let those salmon bites bake until they reach that perfect golden hue.
