- 4 medium sweet potatoes, peeled and thinly sliced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: 1 tablespoon chopped fresh parsley for garnish
For those looking to mix things up, feel free to substitute the Parmesan with Pecorino Romano for a more robust flavor profile. And if thyme isn’t your favorite herb, rosemary makes a wonderful aromatic alternative.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
- In a large bowl, combine the sliced sweet potatoes, olive oil, garlic powder, thyme, salt, and pepper. Toss until the sweet potatoes are evenly coated.
- Arrange the sweet potato slices in stacks on the prepared baking sheet, about 2 to 3 inches high. Sprinkle each stack generously with Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and the Parmesan is golden and crispy. The aroma will remind you of my abuela’s kitchen, where love was measured by the handful.
- Remove from the oven and let cool slightly. Garnish with fresh parsley, if desired, before serving.
