Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a large bowl, combine the sliced sweet potatoes, olive oil, garlic powder, thyme, salt, and pepper. Toss until the sweet potatoes are evenly coated.
  3. Arrange the sweet potato slices in stacks on the prepared baking sheet, about 2 to 3 inches high. Sprinkle each stack generously with Parmesan cheese.
