12 rice paper wrappers
1 cup cooked and shredded chicken (or substitute with tofu for a vegetarian option)
1 cup finely shredded cabbage
1/2 cup grated carrots
2 green onions, finely chopped
2 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon sesame oil
1/4 teaspoon black pepper
Vegetable oil for frying
Optional: sweet chili sauce for dipping
Instructions
Begin by preparing the filling. In a large bowl, combine the shredded chicken (or tofu), cabbage, carrots, green onions, and garlic. Stir in the soy sauce, sesame oil, and black pepper until well mixed.
Fill a shallow dish with warm water. Dip a rice paper wrapper into the water for about 10 seconds until it becomes pliable.
Place the softened wrapper on a clean surface. Spoon about 2 tablespoons of the filling onto the center of the wrapper.
Fold the sides of the wrapper over the filling, then roll it up tightly to form a dumpling. Repeat with the remaining wrappers and filling.
Heat about 1/4 inch of vegetable oil in a skillet over medium heat. Once hot, carefully place the dumplings in the oil, seam side down.
Fry the dumplings for about 2-3 minutes on each side until they are golden brown and crispy.
Remove the dumplings from the skillet and drain on paper towels to remove excess oil.
Serve warm with sweet chili sauce for dipping, if desired.
