Ingredients
1 pound small potatoes (baby Yukon Gold or red potatoes work well)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and pepper to taste
1 cup marinara sauce (store-bought or homemade)
1 1/2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon red pepper flakes (optional, for a bit of heat)
Fresh basil leaves for garnish
Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Place the potatoes in a large pot, cover with water, and add a generous pinch of salt. Bring to a boil and cook until the potatoes are fork-tender, about 15 minutes.
Drain the potatoes and let them cool slightly. Once cool enough to handle, place them on the prepared baking sheet.
Using the bottom of a glass or a potato masher, gently smash each potato until they’re about 1/2 inch thick.
Drizzle the smashed potatoes with olive oil, and sprinkle with garlic powder, oregano, salt, and pepper. Toss gently to coat.
Bake in the oven for 20 minutes, or until the edges are crispy and golden brown.
Remove the baking sheet from the oven and spoon marinara sauce over each potato. Sprinkle with mozzarella and Parmesan cheeses.
Return to the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Sprinkle with red pepper flakes if using, and garnish with fresh basil leaves before serving.
