Learn how to make delicious Crispy Stuffed Pork Loin Roast with Golden Potatoes. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 (3-pound) pork loin roast
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese (or substitute with goat cheese for a tangier flavor)
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 pounds small golden potatoes, halved
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). This temperature ensures a crispy exterior while keeping the meat juicy.
  2. In a small bowl, combine salt, pepper, garlic powder, and dried oregano. Rub this mixture all over the pork loin to infuse it with flavor.
  3. Slice a deep pocket into the side of the pork loin, being careful not to cut all the way through.
  4. In a medium bowl, mix together the chopped spinach, feta cheese, and sun-dried tomatoes. Carefully stuff this mixture into the pocket you created in the pork loin.
  5. Secure the stuffed pork loin with kitchen twine, tying it at 2-inch intervals to keep the stuffing in place during roasting.
  6. Place the pork loin in a roasting pan and drizzle with olive oil. This will help to achieve that crispy, golden crust.
  7. Arrange the halved golden potatoes around the pork loin. Sprinkle with rosemary, thyme, and a pinch of salt. Drizzle with melted butter for extra flavor.
  8. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature of the pork reaches 145°F (63°C). The potatoes should be golden and tender.
  9. Remove from the oven and let the pork rest for 10 minutes before slicing. This rest period allows the juices to redistribute, ensuring a moist roast.
  10. Slice the pork loin and serve with the golden potatoes on the side. Enjoy the medley of flavors that will surely remind you of a comforting home-cooked meal.
