1 1/2 pounds boneless, skinless chicken breasts
1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes (optional for a bit of heat)
4 cups chicken broth
1 can (14.5 ounces) diced tomatoes, undrained
1 cup heavy cream
1 cup freshly grated Parmesan cheese
Salt and freshly ground black pepper, to taste
Fresh basil leaves, for garnish
Crusty bread, for serving
Instructions
Start by heating the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent and fragrant, about 3-4 minutes.
Transfer the onion and garlic mixture to your crock pot. Add the chicken breasts, Italian seasoning, crushed red pepper flakes, chicken broth, and diced tomatoes.
Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
Once the chicken is done, remove it from the crock pot and shred it with two forks. Return the shredded chicken to the pot.
Pour in the heavy cream and freshly grated Parmesan cheese. Stir until the cheese is melted and the soup is creamy.
Season with salt and pepper to taste, and let the soup heat through for another 15-20 minutes on low.
Serve hot, garnished with fresh basil leaves and a side of crusty bread.
