Learn how to make delicious Crock Pot Hawaiian Chicken Sandwiches. Easy recipe with step-by-step instructions.
Total Time:45 minutes
Yield:4 servings
Ingredients
1.5 pounds boneless, skinless chicken breasts
1 cup pineapple chunks, canned or fresh
1/2 cup pineapple juice
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
2 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon black pepper
Buns of your choice (I love a good brioche bun for its slight sweetness)
Optional toppings: sliced red onions, lettuce, or jalapeños for a kick
Instructions
Place the chicken breasts at the bottom of your Crock Pot. Growing up, I learned that layering is key in cooking, just like in life.
In a mixing bowl, combine the pineapple chunks, pineapple juice, soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and black pepper. Stir until the sugar is dissolved.
Pour the mixture over the chicken breasts, ensuring they are fully covered. My mom always said, “A well-marinated dish is a well-loved dish.”
Set your Crock Pot to low and cook for 6-7 hours, or on high for 3-4 hours, until the chicken is tender and easily shredded.
Once cooked, carefully remove the chicken and shred it using two forks. Return the shredded chicken to the Crock Pot and stir to soak up all the flavorful juices.
Toast your buns lightly for an added crunch, then pile on the chicken mixture. Top with your choice of onions, lettuce, or jalapeños.
Serve warm and enjoy the delightful blend of flavors that remind me of family gatherings and sunny afternoons in our Asheville backyard.
