Ingredients

  • 1 pound boneless, skinless chicken breasts

  • 8 ounces cream cheese, cubed

  • 1 tablespoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 12 ounces fettuccine pasta
  • 2 tablespoons chopped fresh parsley for garnish

If you’re looking to add a twist, feel free to substitute fettuccine with penne or rigatoni. For a lighter version, you can use half-and-half instead of heavy cream, but keep in mind that the sauce might be less creamy.

Instructions

  1. Place the chicken breasts at the bottom of your crockpot. Season them with salt, pepper, and garlic powder.
  2. Pour the chicken broth and heavy cream over the chicken. Add the cream cheese cubes, Parmesan cheese, and Italian seasoning.
  3. Cover and cook on low for 4-5 hours, or until the chicken is tender and cooked through.
  4. Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
  5. Break the fettuccine pasta in half and add it to the crockpot. Stir to ensure the pasta is submerged in the sauce.
  6. Cover and cook on high for an additional 30-45 minutes, stirring occasionally, until the pasta is cooked to your desired level of doneness.
  7. Once the pasta is tender, give everything a good stir to combine. Sprinkle with fresh parsley before serving.
