Learn how to make delicious Delicious Old Bay Chicken Thighs. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 ½ pounds bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons Old Bay seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon, cut into wedges
  • Fresh parsley, chopped (for garnish)

Feel free to substitute bone-in thighs with boneless if you prefer—just adjust the cooking time accordingly. You can also add a pinch of cayenne pepper for a little extra heat if that’s your style!

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, combine the Old Bay seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Pat the chicken thighs dry with paper towels. This helps the skin crisp up beautifully.
  4. Rub the chicken thighs with olive oil, ensuring they are evenly coated. Then, sprinkle the seasoning mix over the thighs, pressing it in gently to adhere.
  5. Place the seasoned chicken thighs on the prepared baking sheet, skin side up, and arrange lemon wedges around them.
  6. Bake in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (75°C). The lemon wedges will caramelize, adding an extra layer of flavor.
  7. Once done, remove from the oven and let the chicken rest for a few minutes. Garnish with freshly chopped parsley before serving.

Remember, as my abuela would say, “Listen to your senses.” The aroma and color will guide you to perfection!
