- ½ teaspoon black pepper
- 1 lemon, cut into wedges

Feel free to substitute bone-in thighs with boneless if you prefer—just adjust the cooking time accordingly. You can also add a pinch of cayenne pepper for a little extra heat if that’s your style!
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, combine the Old Bay seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Pat the chicken thighs dry with paper towels. This helps the skin crisp up beautifully.
- Rub the chicken thighs with olive oil, ensuring they are evenly coated. Then, sprinkle the seasoning mix over the thighs, pressing it in gently to adhere.
- Place the seasoned chicken thighs on the prepared baking sheet, skin side up, and arrange lemon wedges around them.
- Bake in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (75°C). The lemon wedges will caramelize, adding an extra layer of flavor.
- Once done, remove from the oven and let the chicken rest for a few minutes. Garnish with freshly chopped parsley before serving.
