Learn how to make delicious Doner Kebab. Easy recipe with step-by-step instructions.
Total Time:45 minutes
Yield:4 servings
Ingredients
2 pounds of boneless lamb shoulder or beef, thinly sliced
1 cup plain yogurt
4 cloves garlic, minced
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon smoked paprika
1 teaspoon cayenne pepper
Salt and pepper to taste
2 tablespoons olive oil
Juice of 1 lemon
4 pita breads
1 cup sliced tomatoes
1 cup shredded lettuce
1/2 cup sliced red onions
1/2 cup tzatziki sauce
Optional: 1/2 teaspoon ground cinnamon for a sweeter flavor
Instructions
In a large bowl, combine the yogurt, garlic, cumin, coriander, paprika, cayenne pepper, salt, pepper, olive oil, and lemon juice. Mix well to create a marinade.
Add the sliced meat to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 4 hours, preferably overnight, to let the flavors meld together.
Preheat your grill or a large skillet over medium-high heat. If using a grill, lightly oil the grates.
Remove the meat from the marinade, shaking off any excess. Cook in batches if necessary, for about 5-6 minutes on each side, until well-browned and cooked through. The aroma will remind you of those vibrant street markets.
Warm the pita breads on the grill or in a toaster oven for a minute until they are soft and pliable.
To assemble the kebabs, place a portion of cooked meat on each pita. Top with sliced tomatoes, shredded lettuce, and red onions. Drizzle generously with tzatziki sauce, a tip I learned from a local vendor who insisted it was the best way to enjoy it.
Roll the pita around the filling, wrap in parchment paper or foil, and serve hot.
