Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons vegetable oil, divided
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Salt and pepper to taste

Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the chicken pieces, seasoning with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the bell peppers, broccoli, and snap peas. Stir fry the vegetables for 4-5 minutes, or until they are just tender but still crisp.
- Return the chicken to the skillet, mixing it with the vegetables.
- In a small bowl, whisk together the soy sauce, oyster sauce, honey, rice vinegar, and sesame oil. Pour this sauce over the chicken and vegetables, stirring to coat everything evenly.
- Bring the mixture to a gentle simmer, then add the cornstarch slurry (cornstarch mixed with water). Stir continuously until the sauce thickens, about 1-2 minutes.
- Taste and adjust seasoning if necessary. Serve immediately with steamed rice or noodles for a complete meal.
