Ingredients

Gathering fresh, quality ingredients is key to creating the best gazpacho. Here’s what you’ll need:

  • 6 ripe tomatoes, cored and roughly chopped
  • 1 large cucumber, peeled and diced
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 cups tomato juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, for garnish
  • Optional: 1 jalapeño, seeded and minced for a spicy kick

If you can’t find red wine vinegar, apple cider vinegar is a great substitute that adds a slightly sweeter note. Feel free to adjust the level of garlic and jalapeño based on your spice preference, as I often do depending on who I’m cooking for.

Instructions

  1. In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, red onion, garlic, and jalapeño (if using). I always find it helpful to work in batches to avoid overcrowding, ensuring a smooth blend.
  2. Pulse the mixture until you reach your desired consistency. I like mine with a bit of texture, but you can blend until completely smooth if you prefer.
  3. Transfer the blended mixture into a large bowl. Stir in the tomato juice, olive oil, and red wine vinegar. Mix well until everything is fully incorporated.
  4. Season with salt and freshly ground black pepper to taste. Remember, the flavors will develop as it chills, so it’s okay if it’s slightly under-seasoned at this stage.
  5. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, allowing the flavors to meld beautifully. Sometimes, when I’m in a rush, I make it the night before for a fully infused taste the next day.
  6. Before serving, taste and adjust the seasoning if needed. Serve chilled, garnished with fresh basil leaves for an aromatic touch.
