Total Time:45 minutes
Yield:4 servings
Ingredients
4 cups fresh peaches, peeled and sliced
2 cups fresh raspberries
1 cup granulated sugar, divided
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
3/4 cup milk (substitute with almond milk for a dairy-free option)
1/2 teaspoon cinnamon (optional, for a hint of spice)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
In a large bowl, combine the sliced peaches, raspberries, 1/2 cup of sugar, lemon juice, and vanilla extract. Stir gently until the fruit is well-coated. Set aside to let the flavors meld together.
In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt. Stir in the melted butter and milk until you have a smooth batter.
Pour the batter into the prepared baking dish, spreading it evenly. Spoon the fruit mixture over the batter, ensuring the fruit is spread out evenly. Sprinkle cinnamon on top, if using.
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the crust comes out clean.
Let the cobbler cool for at least 10 minutes before serving. This allows the juices to settle and the flavors to concentrate.
