Ingredients

This recipe requires simple ingredients, many of which you might already have in your pantry. Here’s what you’ll need:

  • 6 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon (or your favorite meat substitute)
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 6 large eggs
  • 1 cup milk
  • Salt and pepper to taste
  • Optional: 1/4 cup chopped cilantro for garnish

If you’re feeling adventurous, swap out the cheddar for a spicy Monterey Jack or add some diced jalapeños for a kick. Cooking is all about making it your own!

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
  2. Line the bottom of the dish with tortillas, overlapping them slightly to cover the entire base.
  3. In a skillet, sauté the bell peppers and green onions until they are just tender. This step always takes me back to the aromatic kitchen of my childhood.
  4. Spread the cooked bacon, sautéed vegetables, and shredded cheese evenly over the tortillas.
  5. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Pour this mixture over the ingredients in the pie dish.
  6. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown. A slight jiggle in the center is okay, but it should not be liquidy.
  7. Let it cool for a few minutes before slicing. Garnish with chopped cilantro if desired.
