Ingredients
This recipe requires simple ingredients, many of which you might already have in your pantry. Here’s what you’ll need:
- 6 small flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon (or your favorite meat substitute)
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- 6 large eggs
- 1 cup milk
- Salt and pepper to taste
- Optional: 1/4 cup chopped cilantro for garnish
If you’re feeling adventurous, swap out the cheddar for a spicy Monterey Jack or add some diced jalapeños for a kick. Cooking is all about making it your own!
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
- Line the bottom of the dish with tortillas, overlapping them slightly to cover the entire base.
- In a skillet, sauté the bell peppers and green onions until they are just tender. This step always takes me back to the aromatic kitchen of my childhood.
- Spread the cooked bacon, sautéed vegetables, and shredded cheese evenly over the tortillas.
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Pour this mixture over the ingredients in the pie dish.
- Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown. A slight jiggle in the center is okay, but it should not be liquidy.
- Let it cool for a few minutes before slicing. Garnish with chopped cilantro if desired.
