Ingredients

  • 8 small flour tortillas
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 pound ground breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • Olive oil or cooking spray

If you’re looking for a healthier option, you can substitute turkey sausage for the breakfast sausage and use whole wheat tortillas for added fiber.

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly coat it with cooking spray.
  2. In a skillet over medium heat, cook the breakfast sausage until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. Melt the butter in a non-stick pan over medium heat. Add the egg mixture and cook, stirring gently, until the eggs are just set but still soft, about 3-4 minutes. Remove from heat.
  5. Lay a tortilla flat and sprinkle a small amount of cheese down the center. Add a spoonful of eggs and sausage on top, then roll the tortilla tightly. Place seam-side down on the prepared baking sheet.
  6. Repeat with the remaining tortillas, eggs, sausage, and cheese.
  7. Lightly brush the tops of the taquitos with olive oil or spray with cooking spray for extra crispiness.
  8. Bake in the oven for 12-15 minutes or until the taquitos are golden and crispy.

My tip: Don’t overfill the tortillas, as this can make them difficult to roll and prone to splitting. Practice makes perfect, and soon you’ll be rolling taquitos like a pro!
