Ingredients
- 8 small flour tortillas
- 6 large eggs
- 1/4 cup milk
- 1/2 pound ground breakfast sausage
- 1 cup shredded cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- Olive oil or cooking spray
If you’re looking for a healthier option, you can substitute turkey sausage for the breakfast sausage and use whole wheat tortillas for added fiber.
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly coat it with cooking spray.
- In a skillet over medium heat, cook the breakfast sausage until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Melt the butter in a non-stick pan over medium heat. Add the egg mixture and cook, stirring gently, until the eggs are just set but still soft, about 3-4 minutes. Remove from heat.
- Lay a tortilla flat and sprinkle a small amount of cheese down the center. Add a spoonful of eggs and sausage on top, then roll the tortilla tightly. Place seam-side down on the prepared baking sheet.
- Repeat with the remaining tortillas, eggs, sausage, and cheese.
- Lightly brush the tops of the taquitos with olive oil or spray with cooking spray for extra crispiness.
- Bake in the oven for 12-15 minutes or until the taquitos are golden and crispy.
My tip: Don’t overfill the tortillas, as this can make them difficult to roll and prone to splitting. Practice makes perfect, and soon you’ll be rolling taquitos like a pro!
