Learn how to make delicious Filipino Chicken Barbecue. Easy recipe with step-by-step instructions.
Total Time:45 minutes
Yield:4 servings
Ingredients
2 pounds of chicken thighs, boneless and skinless
1 cup soy sauce
1/2 cup calamansi juice (or substitute with a mix of lime and orange juice)
1/2 cup brown sugar
5 cloves garlic, minced
1 teaspoon black pepper
1 teaspoon chili flakes (optional, for a bit of heat)
1/4 cup banana ketchup (or tomato ketchup as a substitute)
2 tablespoons vegetable oil
Skewers (if using bamboo, soak in water for 30 minutes before grilling)
Instructions
In a large mixing bowl, combine the soy sauce, calamansi juice, brown sugar, minced garlic, black pepper, chili flakes, and banana ketchup. Mix well until the sugar is dissolved.
Add the chicken thighs to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 4 hours or overnight for maximum flavor.
Preheat your grill to medium-high heat. If you’re using a charcoal grill, allow the coals to become white-hot for that perfect smoky flavor.
Thread the marinated chicken pieces onto the skewers, leaving a bit of space between each piece for even cooking.
Brush the grill grates with vegetable oil to prevent sticking. Place the skewers on the grill and cook for about 6-8 minutes per side, or until the chicken is cooked through and has a slight char.
While grilling, occasionally baste the chicken with leftover marinade for added flavor and moisture.
Once done, remove the skewers from the grill and let them rest for a few minutes before serving.
