1 pound beef sirloin, cut into thin strips
2 tablespoons olive oil
1 large yellow onion, thinly sliced

2 cups beef broth

8 ounces egg noodles
Salt and pepper to taste
1/2 cup grated Gruyère cheese (optional)

Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef strips and cook until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.
