Learn how to make delicious Fresh Fruit Crepe Rolls. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups whole milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1 cup sliced bananas
  • 1 tablespoon lemon juice
  • Powdered sugar for dusting (optional)

Feel free to substitute the fruits based on what’s available and your personal preferences. Fresh mangoes or peaches can add an exotic twist, while raspberries provide a lovely tartness.

Instructions

  1. In a medium-sized bowl, whisk together the flour, sugar, and salt.
  2. In another bowl, mix the milk, eggs, melted butter, and vanilla extract until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, whisking continually to prevent lumps. Let the batter rest for about 15 minutes.
  4. While the batter rests, prepare your fruits. Toss the sliced strawberries, blueberries, and bananas with lemon juice to keep them fresh and vibrant.
  5. Heat a non-stick skillet over medium heat. Once hot, pour a small ladle of batter into the center and swirl to spread it evenly.
  6. Cook for about 1-2 minutes until the edges begin to lift and the bottom is lightly golden. Flip the crepe and cook for another minute.
  7. Transfer the crepe to a plate and repeat with the remaining batter.
  8. Place a small amount of the fruit mixture onto each crepe, roll them up gently, and arrange on a serving platter.
  9. Dust with powdered sugar if desired. Serve immediately for the best flavor and texture.
