Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons unsalted butter
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1 cup heavy cream
1/2 cup grated Parmesan cheese
8 ounces fettuccine or pasta of choice
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions
Start by cooking the pasta according to package instructions. Drain and set aside, reserving some pasta water.
In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, reduce heat to medium and melt the butter. Add minced garlic, thyme, and oregano, stirring until fragrant, about 1 minute.
Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until the sauce is smooth and creamy.
Add the cooked pasta and chicken back into the skillet, tossing to coat everything evenly in the sauce. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.
Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
