  • 1 medium onion, finely chopped

  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  1. Begin by heating the olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes, or until they’re golden brown and soft. Remove the mushrooms from the skillet and set them aside.
  2. In the same skillet, add the remaining tablespoon of butter. Once melted, add the minced garlic and chopped onion. Sauté for about 2-3 minutes until the onion becomes translucent and the garlic is fragrant.
  3. Stir in the rice, ensuring each grain is coated with the butter and garlic mixture. Cook for about 2 minutes, toasting the rice lightly.
  4. Pour in the vegetable broth, bring the mixture to a gentle boil, and then reduce the heat to low. Cover the skillet and let it simmer for about 15-18 minutes, or until the rice is cooked through and the liquid is absorbed.
  5. Once the rice is tender, gently fold in the sautéed mushrooms. Season with salt and black pepper to taste.
