Ingredients
8 ounces of linguine or spaghetti
1 pound large shrimp, peeled and deveined
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup dry white wine or chicken broth
1/4 teaspoon crushed red pepper flakes (optional for a kick)
Juice of 1 lemon
1/4 cup chopped fresh parsley
Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional but recommended)
Instructions
Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp, season with salt and pepper, and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
In the same skillet, add the remaining butter. Once melted, add the garlic and cook until fragrant, about 1 minute.
Pour in the white wine and add the crushed red pepper flakes. Let it simmer for 2-3 minutes until slightly reduced.
Return the shrimp to the skillet and add the cooked pasta. Toss everything together, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
Add the lemon juice and parsley, giving everything a final toss. Taste and adjust seasoning if necessary.
Serve the pasta with a sprinkle of Parmesan cheese if desired. Enjoy this delightful meal with a glass of your favorite white wine.
