Ingredients

  • 8 ounces of linguine or spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/4 teaspoon crushed red pepper flakes (optional for a kick)
  • Juice of 1 lemon
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional but recommended)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp, season with salt and pepper, and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the remaining butter. Once melted, add the garlic and cook until fragrant, about 1 minute.
  4. Pour in the white wine and add the crushed red pepper flakes. Let it simmer for 2-3 minutes until slightly reduced.
  5. Return the shrimp to the skillet and add the cooked pasta. Toss everything together, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
  6. Add the lemon juice and parsley, giving everything a final toss. Taste and adjust seasoning if necessary.
  7. Serve the pasta with a sprinkle of Parmesan cheese if desired. Enjoy this delightful meal with a glass of your favorite white wine.
