1.5 pounds sirloin steak, cut into 1-inch cubes
3 tablespoons unsalted butter
5 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
1.5 pounds baby potatoes
1 cup shredded cheddar cheese
1/4 cup sour cream
2 tablespoons chopped fresh parsley
Instructions
Begin by boiling the baby potatoes in a large pot of salted water until they are tender, about 15 minutes. Drain and let them cool slightly.
Preheat your oven to 400°F. Place the cooled potatoes on a baking sheet and gently smash them with the back of a fork.
Sprinkle shredded cheddar cheese over the smashed potatoes and bake for 15 minutes, or until the cheese is melted and bubbly.
While the potatoes are baking, heat olive oil in a large skillet over medium-high heat. Add the steak cubes and season with salt and pepper. Cook for about 3-4 minutes, ensuring each side is browned.
