Ingredients

  • 12 ounces of your favorite pasta (penne or fettuccine work well)
  • 1 pound of sirloin steak, sliced into thin strips
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley for garnish

Feel free to substitute the sirloin with a cut of steak you prefer or have on hand. If you’re looking for a lighter option, you can use half-and-half instead of heavy cream, though the sauce will be less rich.

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet over medium-high heat, add olive oil. Once hot, add the steak strips and season with salt and pepper. Cook until browned, about 3-4 minutes. Remove the steak from the skillet and set aside.
  3. In the same skillet, lower the heat to medium and add the butter. Once the butter is melted, add the minced garlic and sauté until fragrant, about 1 minute.
  4. Pour in the heavy cream, stirring constantly. Let the sauce simmer for 2-3 minutes until it thickens slightly.
  5. Stir in the Parmesan cheese until it melts into the sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
  6. Add the cooked pasta and steak back into the skillet, tossing to coat in the creamy garlic butter sauce.
  7. Sprinkle with chopped parsley before serving. Enjoy immediately.
