Ingredients

  • 2 pounds of baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped (or substitute with 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary, chopped (or substitute with 1 teaspoon dried rosemary)

Feel free to experiment with different herbs based on what you have on hand or your personal preferences. For example, oregano or basil can add a unique twist to the dish. And while baby potatoes are my go-to for their tender texture, you can also use Yukon Gold or red potatoes if that’s what you have available.

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a small saucepan over low heat, melt the butter and olive oil together. Add the minced garlic and sauté for about 2 minutes until fragrant, being careful not to brown the garlic.
  3. Remove the saucepan from heat and stir in the chopped herbs, salt, and pepper. This will create a flavorful herb butter that is the key to this dish.
  4. Place the halved potatoes in a large mixing bowl. Pour the herb butter over the potatoes, tossing them until they’re evenly coated.
  5. Spread the potatoes out in a single layer on the prepared baking sheet. This ensures they cook evenly and get that beautiful golden-brown crust.
  6. Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and crispy on the edges. Toss them halfway through cooking to ensure even roasting.
  7. Once done, remove from the oven and let them cool for a few minutes before transferring to a serving platter. Garnish with additional fresh parsley for a pop of color.

From my experience, the key to perfectly roasted potatoes is getting the right balance between crispy skins and tender insides. Don’t be afraid to let them get a bit golden; that’s where the magic happens.
