If you don’t have ground chicken, feel free to substitute with ground turkey for a similar texture and flavor. And if you’re out of fresh parsley, dried parsley works just as well — just use about a teaspoon instead.

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a loaf pan with olive oil.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan, minced garlic, parsley, milk, egg, salt, and black pepper. Mix the ingredients gently with your hands until just combined. Be careful not to overmix, as this can make the meatloaf tough.
  3. Transfer the mixture into the prepared loaf pan, pressing it gently to form an even layer. If desired, spread marinara sauce over the top for an extra layer of flavor.
  4. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C). The top should be golden brown and slightly crispy.
  5. Allow the meatloaf to rest for about 10 minutes before slicing. This helps the juices redistribute, keeping the meatloaf moist and flavorful.
