Learn how to make delicious Garlic Parmesan Chicken Skewers. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 1/2 pounds of chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Wooden or metal skewers
  • Chopped fresh parsley for garnish (optional)

If you’re out of Italian seasoning, feel free to create your own blend using dried basil, oregano, and thyme. And while fresh garlic is ideal, garlic powder can be a handy substitute in a pinch.

Instructions

  1. In a large bowl, whisk together olive oil, minced garlic, parmesan cheese, Italian seasoning, salt, black pepper, and lemon juice. This marinade takes me back to the days of helping my abuela, who always insisted that the secret to great flavor lies in a well-seasoned base.
  2. Add the cubed chicken to the bowl, ensuring each piece is well coated with the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  4. Preheat your grill or oven to 400°F (200°C). If using an oven, line a baking sheet with aluminum foil for easy cleanup.
  5. Thread the marinated chicken onto the skewers, leaving a bit of space between each piece for even cooking.
  6. Place the skewers on the grill or the prepared baking sheet. Cook for 15-20 minutes, turning halfway through, until the chicken is cooked through and has a slight char. The aroma will remind you of summer nights spent cooking outside, a tradition I cherish to this day.
  7. Garnish with chopped fresh parsley and a sprinkle of extra parmesan if desired. Serve hot and enjoy the delightful blend of garlic and cheese.
