- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes

- 3 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 tablespoon Italian seasoning

- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- Fresh parsley, chopped for garnish
- Wooden or metal skewers
If you’re short on parmesan cheese, feel free to substitute with pecorino romano. For a spicier kick, add a pinch of red pepper flakes.
Instructions
- Start by soaking your wooden skewers in water for at least 30 minutes to prevent them from burning. If using metal skewers, this step can be skipped.
- In a large bowl, combine olive oil, minced garlic, parmesan cheese, Italian seasoning, salt, pepper, and lemon juice. Mix well to create a marinade.
- Add the chicken cubes to the marinade, tossing them until they are well-coated. Let them marinate for at least 20 minutes, or if time allows, refrigerate for up to 2 hours to deepen the flavors.
- Preheat your grill to medium-high heat. If you’re cooking indoors, a grill pan or broiler works just as well.
- Thread the marinated chicken onto skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh parsley before serving.
