Learn how to make delicious Garlic Parmesan Chicken Skewers. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped for garnish
  • Wooden or metal skewers

If you’re short on parmesan cheese, feel free to substitute with pecorino romano. For a spicier kick, add a pinch of red pepper flakes.

Instructions

  1. Start by soaking your wooden skewers in water for at least 30 minutes to prevent them from burning. If using metal skewers, this step can be skipped.
  2. In a large bowl, combine olive oil, minced garlic, parmesan cheese, Italian seasoning, salt, pepper, and lemon juice. Mix well to create a marinade.
  3. Add the chicken cubes to the marinade, tossing them until they are well-coated. Let them marinate for at least 20 minutes, or if time allows, refrigerate for up to 2 hours to deepen the flavors.
  4. Preheat your grill to medium-high heat. If you’re cooking indoors, a grill pan or broiler works just as well.
  5. Thread the marinated chicken onto skewers, leaving a little space between each piece for even cooking.
  6. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  7. Once cooked, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh parsley before serving.

Pro tip from my kitchen: Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F for perfect doneness.
