Ingredients
- 1 1/2 cups pitted dates
- 1 1/4 cups boiling water
- 1 teaspoon baking soda
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour

- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- For the toffee sauce:
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1 cup brown sugar

Instructions
- Preheat your oven to 350°F. Grease a baking dish with butter and set aside.
- In a small bowl, combine dates and boiling water, letting them sit until softened, about 10 minutes. Stir in the baking soda.
- In a large mixing bowl, cream together butter and sugar until light and fluffy, about 3-4 minutes.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually fold in flour, baking powder, and salt, mixing until just combined.
- Gently incorporate the date mixture, creating a smooth batter.
- Pour the batter into the prepared baking dish and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake bakes, prepare the toffee sauce. In a saucepan, combine heavy cream, butter, and brown sugar. Bring to a boil, then simmer for 5 minutes, stirring frequently until thickened.
- Once the cake is done, let it cool for a few minutes. Poke holes all over the top with a skewer and pour half of the toffee sauce over the cake, allowing it to soak in.
- Serve warm with the remaining sauce drizzled generously on top.
