Ingredients

  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • For the toffee sauce:
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 cup brown sugar

Feel free to substitute granulated sugar with coconut sugar for a deeper flavor, or use whole wheat flour for a nuttier texture. These small tweaks maintain the essence of the dish while allowing you to experiment, much like I learned from my abuela’s intuitive cooking style.

Instructions

  1. Preheat your oven to 350°F. Grease a baking dish with butter and set aside.
  2. In a small bowl, combine dates and boiling water, letting them sit until softened, about 10 minutes. Stir in the baking soda.
  3. In a large mixing bowl, cream together butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually fold in flour, baking powder, and salt, mixing until just combined.
  6. Gently incorporate the date mixture, creating a smooth batter.
  7. Pour the batter into the prepared baking dish and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  8. While the cake bakes, prepare the toffee sauce. In a saucepan, combine heavy cream, butter, and brown sugar. Bring to a boil, then simmer for 5 minutes, stirring frequently until thickened.
  9. Once the cake is done, let it cool for a few minutes. Poke holes all over the top with a skewer and pour half of the toffee sauce over the cake, allowing it to soak in.
  10. Serve warm with the remaining sauce drizzled generously on top.
