Ingredients

  • 4 slices of sourdough bread
  • 2 tablespoons unsalted butter, softened
  • 1 cup shredded Havarti cheese
  • 1/2 cup fresh blueberries
  • 1 tablespoon honey
  • Pinch of salt
  • Optional: A handful of arugula for some peppery contrast

Feel free to substitute Havarti with a creamy Brie or even a sharp cheddar, depending on your preference. If blueberries are out of season, frozen ones work just as well.

Instructions

  1. Preheat a griddle or non-stick skillet over medium heat.
  2. Spread butter on one side of each slice of sourdough bread.
  3. Place two slices of bread, buttered side down, onto the skillet.
  4. Evenly distribute the shredded Havarti cheese on the bread slices in the skillet.
  5. In a small bowl, gently toss the blueberries with honey and a pinch of salt.
  6. Spoon the honeyed blueberries over the cheese, allowing some to tumble over the edges for a rustic look.
  7. If desired, top with a few leaves of arugula for added texture and flavor.
  8. Cover with the remaining slices of bread, buttered side up.
  9. Grill for 3-4 minutes until the bottom is golden brown and the cheese begins to melt.
  10. Carefully flip the sandwiches and grill for another 3-4 minutes until the other side is equally golden and the cheese is fully melted.
  11. Remove from the skillet, let them rest for a minute, then slice in half and serve warm.
