Ingredients
- 1 1/2 pounds of sirloin steak, cut into 1-inch cubes
- 3 cloves of garlic, minced
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into wedges
- Wooden or metal skewers
- For the Chimichurri Sauce:
- 1 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 3 tablespoons red wine vinegar
- 1/2 cup olive oil
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cloves garlic, minced
Feel free to experiment with the vegetables or even substitute the sirloin for your favorite cut of beef. And if cilantro isn’t your thing, you can skip it in the chimichurri—it will still be delicious!
Instructions
- In a large bowl, combine the olive oil, soy sauce, pepper, salt, and minced garlic. Add the cubed steak and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for more intense flavor.
- While the steak is marinating, prepare the chimichurri sauce. In a small bowl, mix together the parsley, cilantro, red wine vinegar, olive oil, crushed red pepper flakes, salt, pepper, and minced garlic. Allow the flavors to meld together at room temperature while you prepare the kabobs.
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Thread the steak, bell peppers, and onion onto the skewers, alternating between meat and vegetables.
- Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the steak is cooked to your desired doneness. I like mine medium-rare, with a slight char on the outside and juicy inside.
- Remove the kabobs from the grill and let them rest for a few minutes. This helps the juices settle, ensuring every bite is tender and flavorful.
- Serve the kabobs with a generous drizzle of chimichurri sauce. Enjoy the explosion of flavors!
