Ingredients
- 4 ripe nectarines, halved and pitted
- 2 tablespoons olive oil
- 8 ounces burrata cheese
- 6 slices of prosciutto
- 2 cups arugula
- 1/4 cup balsamic glaze
- Salt and pepper to taste
- Optional: Fresh basil leaves for garnish
If nectarines are out of season, feel free to substitute with peaches or plums. The burrata can be swapped for fresh mozzarella if needed, but the creamy texture of burrata adds a luxurious touch to the dish.
Instructions
- Preheat your grill to medium-high heat. Lightly brush the nectarine halves with olive oil to prevent sticking and enhance their natural sweetness.
- Place the nectarines cut-side down on the grill. Grill for about 3-4 minutes until they have nice grill marks and are slightly softened.
- Remove the nectarines from the grill and let them cool slightly. Once they are cool enough to handle, slice them into wedges.
- On a large serving platter, lay out the arugula as a bed. Arrange the grilled nectarine slices over the greens.
- Gently tear the burrata and distribute it over the salad. The creamy center will blend beautifully with the other ingredients.
- Layer the prosciutto slices amongst the nectarines and burrata, letting them naturally fold and create texture.
- Drizzle the balsamic glaze over the entire salad, adding a sweet and tangy finish.
- Season with a pinch of salt and freshly ground black pepper. Garnish with fresh basil leaves for a pop of color and aroma.
