Ingredients
- 1.5 pounds of boneless, skinless chicken breasts
- 1 packet (1 ounce) of ranch seasoning mix
- 3 cloves of garlic, minced
- 1/2 cup grated parmesan cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Wooden or metal skewers
If you don’t have ranch seasoning on hand, you can easily substitute it with a mixture of dried dill, parsley, onion powder, and garlic powder. Feel free to adjust the spices according to your taste preferences, just as my abuela would do with her recipes.
Instructions
- Begin by soaking your wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
- While the skewers are soaking, cut the chicken breasts into 1-inch cubes. This ensures even cooking and allows the marinade to coat each piece thoroughly.
- In a large bowl, combine the ranch seasoning, minced garlic, parmesan cheese, olive oil, lemon juice, paprika, salt, and pepper. Stir well to create a marinade.
- Add the chicken cubes to the bowl, tossing them in the marinade until they are well coated. Let the chicken marinate for at least 20 minutes, allowing the flavors to meld together.
- Preheat your grill to medium-high heat. If you’re using a grill pan, preheat it over medium-high heat on your stovetop.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char. You’ll know they’re done when the internal temperature reaches 165°F and the juices run clear.
- Remove the skewers from the grill and let them rest for a few minutes before serving. This step allows the juices to redistribute, making each bite tender and juicy.
As you grill these skewers, you’ll notice the aroma of garlic and parmesan wafting through the air, reminiscent of my grandmother’s kitchen where the scent of cooking was always a comforting presence.
