1 pound ground beef (substitute with ground turkey for a leaner option)
4 medium-sized potatoes, diced (Yukon Gold or Russet work best)
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika (for a smoky twist, use smoked paprika)
1 tablespoon olive oil

Instructions
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3 minutes.
Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, approximately 5-7 minutes. Drain any excess fat.
