Ingredients

  • 2 garlic cloves, minced
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional for heat)
  • 4 pineapple slices, grilled
  • 4 hamburger buns or rice for serving
  • Fresh cilantro for garnish

Instructions

  1. In a medium bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, ginger, garlic, sesame oil, black pepper, and red pepper flakes. This marinade reminds me of my grandmother’s secret sauce, a concoction she swore was the key to happiness.
  2. Place the chicken breasts in a large zip-top bag and pour the marinade over them. Seal the bag, ensuring the chicken is well-coated. Marinate in the refrigerator for at least 2 hours, or overnight for deeper flavor.
