Ingredients
1 pound chicken breast, cut into strips
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup Greek yogurt
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped
2 cups cooked brown rice or quinoa
1 cucumber, diced
1 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1/4 cup feta cheese, crumbled
1/4 cup kalamata olives, sliced
Optional: pita bread, for serving
Instructions
In a large bowl, combine the chicken strips with olive oil, minced garlic, oregano, cumin, smoked paprika, salt, and pepper. Mix well to coat the chicken evenly.
Heat a grill pan or skillet over medium-high heat. Add the marinated chicken and cook for 4-5 minutes on each side, or until fully cooked and golden brown. Remove from heat and set aside.
In a small bowl, whisk together Greek yogurt, lemon juice, and fresh dill to make the dressing. Season with a pinch of salt and pepper to taste.
Assemble your gyro bowls by dividing the cooked brown rice or quinoa among serving bowls.
Top each bowl with cooked chicken, diced cucumber, cherry tomatoes, red onion, feta cheese, and kalamata olives.
Drizzle with the yogurt dressing and serve immediately. For an extra touch, warm pita bread can be served on the side.
