  • 2 cans (28 ounces each) whole peeled tomatoes
  • 1 teaspoon sugar

  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional for some heat)
  • 1/4 cup fresh basil leaves, chopped

If you prefer a chunkier sauce, feel free to substitute one can of whole tomatoes with diced tomatoes. For a richer flavor, you can add a splash of red wine during the simmering process.

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions and cook until they are translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute, being careful not to let it burn.
  3. Pour in the whole peeled tomatoes, crushing them gently with a wooden spoon. Include all the juices from the cans.
  4. Stir in the sugar, salt, black pepper, dried oregano, dried basil, and red pepper flakes (if using). Bring the mixture to a gentle simmer.
  5. Reduce the heat to low, cover the pot, and let the sauce simmer for at least 30 minutes. Stir occasionally to prevent sticking.
  6. After simmering, use an immersion blender to puree the sauce to your desired consistency. For a chunkier sauce, blend less.
  7. Stir in the fresh basil leaves and simmer for another 5 minutes to allow the flavors to meld together.
