  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 tablespoons chopped fresh cilantro (optional for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces, season with smoked paprika, salt, and pepper, and cook until browned on all sides, about 5-7 minutes.
  2. Remove the chicken from the skillet and set aside. In the same skillet, add the chopped onion and garlic, sautéing until the onion is translucent, about 3 minutes.
  3. Add the rice to the skillet and toast it lightly for another 2 minutes, stirring frequently. This step adds a nutty flavor to the rice.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes.
  5. While the rice is cooking, mix together the barbecue sauce and honey in a small bowl. Set it aside.
