Ingredients
Gathering ingredients for this dish is like assembling a cast for a play – each has its role, bringing its unique flair to the performance. Here’s what you’ll need:
- 2 salmon fillets (about 6 ounces each)
- 1 pound of baby potatoes, halved
- 3 tablespoons of honey
- 4 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 1 tablespoon of olive oil
- 1 tablespoon of unsalted butter
- 1 teaspoon of smoked paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish
If you’re out of baby potatoes, feel free to use Yukon Golds or even sweet potatoes for a sweeter twist. And if soy sauce isn’t your thing, tamari or coconut aminos are great substitutes!
Instructions
Cooking this dish is like painting a canvas – each layer adds depth and character. Here’s how to bring it to life:
- Preheat your oven to 400°F (200°C). This is just like my mom used to say, “A hot oven is half the battle.”
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add the halved potatoes, season with salt, pepper, and smoked paprika. Cook for 10 minutes, stirring occasionally until golden and slightly crispy.
- While the potatoes are cooking, in a small bowl, whisk together honey, soy sauce, and minced garlic. This sauce is the heart of the dish, tying all flavors together.
- Push the potatoes to the side of the skillet and add butter. Once melted, place the salmon fillets skin-side down in the skillet. Sear for 3 minutes until the skin is crisp.
- Pour the honey garlic mixture over the salmon and potatoes, ensuring everything is well-coated. Transfer the skillet to the preheated oven.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The aroma will remind you of my grandmother’s kitchen – warm, inviting, and full of promise.
- Remove from the oven and garnish with fresh parsley before serving.
