- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large mixing bowl, toss the diced sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread them evenly on the baking sheet.
- Bake the sweet potatoes for 20 minutes, or until they start to soften.
- While the potatoes are baking, heat a skillet over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove sausage from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Stir in the honey and cook for an additional 2 minutes until slightly thickened.
- Remove the sweet potatoes from the oven, add the cooked sausage, and drizzle with the honey garlic mixture. Toss everything gently to combine.
- Return the baking sheet to the oven and bake for an additional 10 minutes, or until the sweet potatoes are tender and the flavors meld together beautifully.
