1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
1/4 cup honey
1/4 cup soy sauce (use low-sodium for a healthier option)
2 tablespoons fresh lime juice
4 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 red bell pepper, sliced
1 cup sugar snap peas
2 cups cooked jasmine rice (or any rice of your choice)
Salt and pepper to taste
Optional: Red pepper flakes for a spicy kick
Instructions
Start by preparing the sauce. In a small bowl, whisk together the honey, soy sauce, lime juice, minced garlic, and grated ginger. Set aside.
Heat the olive oil in a large pan over medium-high heat. Add the shrimp, season with salt and pepper, and cook for about 2 minutes on each side, or until they turn pink and opaque.
Remove the shrimp from the pan and set them aside.
In the same pan, add the sliced red bell pepper and sugar snap peas. Stir-fry for about 3-4 minutes until they are tender-crisp.
Return the shrimp to the pan and pour the honey garlic sauce over the top. Toss everything together to ensure the shrimp and veggies are well coated with the sauce.
Allow the mixture to simmer for an additional 2 minutes, letting the flavors meld beautifully.
Remove from heat and serve immediately over a bed of warm jasmine rice.
