Instructions
- Begin by preparing the marinade. In a small bowl, whisk together honey, lime juice, olive oil, chili powder, garlic powder, salt, and pepper.
- Place the chicken breasts in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes in the refrigerator, allowing the flavors to meld.
- While the chicken marinates, cook your rice according to package instructions. I often use my trusty rice cooker, which never fails to produce perfectly fluffy rice.
- After marinating, heat a large skillet over medium-high heat. Add a little olive oil and sear the chicken for 5-7 minutes on each side, or until cooked through and golden brown.

- To assemble, layer the rice onto plates, followed by chicken slices, and top with avocado slices and a sprinkle of cilantro.
