1 lb boneless, skinless chicken thighs
3 tablespoons honey
2 tablespoons fresh lime juice
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
1 cup jasmine rice
2 cups chicken broth
1 ripe avocado, diced
1/4 cup fresh cilantro, chopped
1 tablespoon olive oil
Optional: lime wedges for serving
Instructions
In a medium bowl, whisk together honey, lime juice, garlic, cumin, chili powder, salt, and pepper. Add the chicken thighs, coating them well. Let them marinate for at least 15 minutes, or up to 2 hours for deeper flavor.
While the chicken is marinating, rinse the jasmine rice under cold water until the water runs clear. This is a trick I picked up from my grandmother to ensure fluffy rice every time.
In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce to a simmer, cover, and cook for 15 minutes or until the rice is tender and the broth is absorbed.
Heat olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade, and add to the skillet. Cook for 6-7 minutes on each side or until the chicken is golden brown and cooked through. Transfer to a plate to rest.
Pour the reserved marinade into the skillet and simmer for 2-3 minutes until slightly thickened.
Fluff the cooked rice with a fork and gently stir in the diced avocado and cilantro.
Slice the chicken thighs and serve over the avocado rice, drizzling with the reduced marinade. Garnish with lime wedges if desired.
