Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup walnuts
- 1/2 cup honey
- 1/2 cup water
- 1 cup granulated sugar
- 1/2 cup mayonnaise
- 2 tablespoons sweetened condensed milk
- 1 tablespoon lemon juice
- 1 cup cornstarch
- Vegetable oil for frying
- Salt and pepper to taste
If you’re looking for a lighter version, you can substitute mayonnaise with Greek yogurt. For a nut-free option, skip the walnuts entirely, and you’ll still have a delicious dish.
Instructions
- Begin by toasting the walnuts. In a small saucepan, combine the walnuts, water, and sugar over medium heat. Stir until the sugar dissolves and the mixture begins to thicken, about 5 minutes. Transfer the walnuts to a parchment-lined baking sheet to cool.
- In a medium bowl, whisk together the mayonnaise, sweetened condensed milk, and lemon juice until smooth. Set aside.
- Season the shrimp with salt and pepper. Dredge each piece in cornstarch, shaking off any excess.
- Heat vegetable oil in a large skillet over medium-high heat. Once hot, fry the shrimp in batches until golden and crispy, about 2-3 minutes per side. Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain excess oil.
- In a large bowl, gently toss the fried shrimp with the creamy sauce. Add the candied walnuts and give it a final toss to ensure everything is well-coated.
- Serve immediately while the shrimp is still hot and crispy. Enjoy the blend of textures and flavors that is sure to delight your senses!
