Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1/4 cup honey

  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 2 cups cooked jasmine rice
  • 1 cup sliced bell peppers (any color)
  • 1 cup broccoli florets
  • 1/4 cup chopped green onions
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Start by marinating the chicken. In a large bowl, mix honey, hot sauce, soy sauce, apple cider vinegar, olive oil, garlic powder, smoked paprika, and salt. Add the chicken thighs, ensuring they are well coated. Let them marinate for at least 30 minutes, or overnight if you have time.
  2. Once marinated, heat a large skillet over medium-high heat. Add a drizzle of olive oil, then place the chicken thighs in the skillet. Cook for about 5-6 minutes on each side, or until the chicken is golden brown and cooked through.
  3. Remove the chicken from the skillet and set it aside to rest. In the same skillet, add the bell peppers and broccoli. Sauté them for 3-4 minutes until they are tender yet crisp.
  4. While the vegetables are cooking, slice the chicken into bite-sized pieces.
  5. To assemble the bowls, start with a base of cooked jasmine rice. Arrange the sliced chicken and sautéed vegetables on top.
  6. Drizzle any remaining hot honey sauce from the skillet over the bowls. Garnish with chopped green onions and sesame seeds for added crunch and flavor.
